I live in a region of Germany with over 500 castles, strongholds, and similar large scale structures. I am not a 3D artist but I have tons of pictures of the inside and outside of a significant number of castles that could aid in creating castle models. I'm also able to go and collect new pictures for any castles in the region if interested. Anyone interested?
I think some one is just trying to find an excuse to go visit some castles. Not that I blame you. ;) I think it would be cool to have some open source references of real castles on here. :)
Hell yes I want more excuses to visit castles. If anyone wants some source photos and possibly floor plans (if my google-fu skills are up to par/I can remember my technical drawing courses) I'm happy to oblige.
I do a fair bit of 3D stuff, though not terribly well... This sounds intriguing, and I'm about to have a lot more free time on my hands, so sure, I'd be up for that. Maybe just one castle for now though - 500 seems a bit intimidating.
Out of interest, whereabouts in Germany are you?
I live in the Eifel region near Trier, Germany. It's on the border of Belgium and Luxembourg (both are roughly 20-30 minutes drive from my house). The reason I thought of this and the particular castle that prompted me was a place I visited over the weekend. The name of the town is Welschbillig. The town has an old castle that was converted to a Catholic church something over 100 years ago but the ruins are still present and part of the castle surrounding the church still remains. You can find it very easily on Google by searching for:
Burg Welschbillig, Germany
Google images has mostly relevant and useful results.
Grimburg Castle is another great one to copy into the 3D world:

This is a bit overkill and one of my kids is running around in some of them but here are some pictures of Burg Welschbillig and the surrounding area. I threw a couple images in that seemed almost useful as textures. They were taken from a wall outside the cathedral.
EDIT
I took over 100 photos during this visit so I have lots more if you want more angles. I also have photos of a lot of generic looking statues that were essentially fence posts. If you want those images I can upload those too.

If you want more pictures I have this habit of snapping anything that gets in front of my camera. I literally have tens of thousands of photos. If you want to see more photos I'm happy to dig in my archive and find some gems.
So, I'm trying to plan this out before I start on the model, and I get the impression there's not that much of the actual castle left. Is the plan to try to make the castle as it is, or reconstruct the original, intact castle?
Here's my attempt at overlaying the floorplan you provided over google maps. Let me know if you think I've got it right.

Id love to see more pictures of castles. It seems hard to fit them in the picture without cutting something off they are so massive in size. Id love to see some Cathedral looking ones if there are any.
Sorry, I've been quited for a while. Building up to school finals right now. I'll get you bunches and bunches more pictures once I'm not cramming for finals.
Ok Good luck with your finals.
