I use Photoshop. Oh and I forgot to mention that the color layers are clipping masks, that means the color is only visible on the grey base layer below.
Nope, I don't have smaller fighters, but I have some more spaceships which I'll post soon (too lazy to pack and upload them now ;) ).
As for the workflow, it's not very difficult. I start with a rough shape in mid grey or some other base color, then I paint details with darker and brighter grey tones. After that step I add layers which are set to overlay, multiply or some other blending modes to colorize the ships. The only annoying part is that you have to mirror each layer separately, unless you paint only one half and merge the layers before you mirror it. I could upload a tutorial with some pictures, if I'm not too lazy. ;)

BTW the ships in the screenshot are about 50% (or even less?) smaller than the originals.
